Rinse the jasmine rice thoroughly in cold water until the water runs clear. This helps remove excess starch, ensuring the rice remains fluffy.
In a medium saucepan, bring the water to a boil with a pinch of salt and the cinnamon stick. Add the rice, then cover and reduce heat to low. Simmer for 12-15 minutes, or until the rice is fully cooked and the water is absorbed.
While the rice is cooking, soak the raisins in warm water for 5 minutes to soften them.
In a small skillet, melt the butter over medium heat. Add the almonds and toast for 2-3 minutes, or until golden brown and fragrant.
Once the rice is cooked, remove the cinnamon stick. Stir in the honey and the drained raisins.
Sprinkle with the toasted almonds, then gently mix to combine the flavors. Serve warm or at room temperature.
