In a large bowl, whisk together the flour, baking powder, sugar, vanilla sugar, and a pinch of salt.
In a separate bowl, whisk the eggs, then add the milk and melted butter, and combine well.
Pour the wet ingredients into the dry ingredients, and mix with a spatula or whisk until you have a smooth, lump-free batter.
Heat a lightly buttered griddle or frying pan over medium heat.
Pour 1/4 cup of batter onto the hot surface for each pancake, and cook for 2-3 minutes, until bubbles start to form on the surface.
Flip the pancakes and cook for another 1-2 minutes, until golden brown.
Transfer the cooked pancakes to a plate and keep them warm until all the batter is used.
Serve with maple syrup and fresh fruit, and spread with extra butter if desired.
