Pour the apple juice into a large pot and add the sugar. Stir until the sugar is completely dissolved.
Add the cinnamon sticks, cloves, and orange peel to infuse the cider with flavor.
Add the yeast and stir well. The yeast will ferment the apple juice, forming the base of the cider.
Cover the pot, leaving a small gap for the gases to escape. Let it ferment at room temperature for 7-10 days.
After fermentation is complete, strain the cider to remove the spices and sediment.
Pour the finished cider into sterilized bottles and seal them tightly.
Refrigerate the cider for another 2-3 days to allow the flavors to meld. Serve chilled.
