Season the beef patties with salt and pepper on both sides. Heat a skillet over medium-high heat and cook the patties for 3-4 minutes per side, or until a golden-brown crust forms.
When the patties are almost cooked through, place a slice of cheddar cheese on top of each patty. Cover the skillet to allow the cheese to melt.
Cook the bacon slices in a hot skillet until crispy. Drain on paper towels.
Toast the hamburger buns until the cut sides are golden brown and slightly crispy.
Wash the lettuce leaves and slice the tomato and red onion into thin rounds.
Assemble the burgers: Spread ketchup on the bottom bun, then layer with lettuce, the cheeseburger patty, crispy bacon, tomato and red onion slices, and dill pickle slices.
Spread mustard on the top bun and close the burger. Serve immediately with french fries or coleslaw.
