Anticuchos Peruvian beef skewers served

Anticuchos (Peruvian Beef Heart Skewers)

Anticuchos, one of the best-known dishes in Peruvian cuisine, dates back to the time of the Incas, but gained its present form under the influence of the Spanish conquistadors. The dish is based on beef heart or tenderloin, which is marinated in a rich, spicy marinade and then grilled over charcoal. A favorite of street vendors and family barbecues, Anticuchos is the perfect choice for a special meal. Served with lime and corn, it offers a truly authentic experience.

    Preparation Steps

    1

Prepare the skewers: Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

    2

Cut the beef into approximately 3-4 cm cubes and place them in a large bowl.

    3

Make the marinade: combine the crushed garlic, ground cumin, Hungarian sweet paprika, Aji Panca paste, vinegar, oil, salt, and pepper. Pour it over the meat and mix thoroughly to coat each piece with the marinade.

    4

Cover the bowl and let the meat marinate in the refrigerator for at least 2-4 hours, or even overnight for the best flavor.

    5

Thread the marinated meat cubes onto the skewers, ensuring they are evenly distributed.

    6

Heat a grill or grill pan over medium-high heat. Cook the skewers, turning occasionally and basting with the remaining marinade, for about 3-4 minutes per side, or until nicely charred and cooked through.

    7

Serve the skewers with fresh lime wedges and grilled potatoes or corn. Offer ají sauce on the side for an extra kick.
