In another bowl, whisk the eggs, then add the milk and stir until smooth.
Pour the wet ingredients into the dry ingredients and whisk until you have a smooth batter, free of lumps.
Peel the apples, remove the cores, and slice them thinly. Sprinkle with cinnamon.
Heat a skillet over medium heat and melt a little butter in it.
Pour a portion of the batter into the skillet, then arrange a few apple slices on top.
Cook for 2-3 minutes, until the bottom is golden brown, then carefully flip and cook for another 1-2 minutes.
Repeat the process with the remaining batter and apples until all the pancakes are cooked.
Serve warm, sprinkled with powdered sugar, optionally with honey or maple syrup.
