Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
In a large bowl, combine the rolled oats, flour, baking powder, sugar, and cinnamon.
In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
Grate the apple and add it to the wet ingredients.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Before serving, dust with powdered sugar, or garnish with extra grated apple and cinnamon.
