200 g Butter
150 g Sour cream
25 g Yeast
50 g Sugar
100 ml Lukewarm milk
1 Egg
150 g Grated apple
100 g Ground walnuts
1 Egg for glazing

    In lukewarm milk, stir in sugar, then crumble in the yeast. Let stand for 10 minutes until foamy.

    Thoroughly squeeze the grated apple to remove excess moisture.

    In a large bowl, sift in the flour, add salt, then rub in the cold butter until it resembles breadcrumbs.

    Pour in the proofed yeast mixture, sour cream, and whole egg. Knead the dough until it is elastic.

    Mix the grated apple and ground walnuts into the dough. Cover and let rise in a warm place for about 1 hour.

    On a floured surface, roll out the dough to about ¾ inch (2 cm) thickness, then fold it over itself several times to create layers.

    Roll out the dough again to ¾ inch (2 cm) thickness, then use a round cookie cutter to cut out the scones. Place them on a baking sheet lined with parchment paper.
