Season the beef patties with salt and pepper on both sides. Heat a skillet over medium-high heat and cook the patties for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are nearly cooked through, place a slice of cheddar cheese on top of each and cover the skillet to allow the cheese to melt.
Cook the bacon slices in a hot skillet until crispy. Transfer them to a paper towel-lined plate to drain excess grease.
Thinly slice the apples and sauté them in olive oil in a skillet until lightly caramelized.
Toast the hamburger buns until the cut sides are golden brown and crispy.
Assemble the burgers: spread honey mustard sauce on the bottom bun, then layer with lettuce leaves, cheesy beef patty, crispy bacon, caramelized apple slices, and red onion.
Top with the other half of the bun and gently press down. Serve immediately with a side salad or sweet potato fries.
