Preheat your oven to 350°F (180°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, baking powder, cinnamon, and a pinch of salt.
Melt the butter and let it cool slightly.
Grate the apples and squeeze out any excess moisture.
In another bowl, whisk together the eggs, granulated sugar, and vanilla sugar until light and fluffy. Add the milk and melted butter.
Gradually add the wet ingredients to the dry ingredients, then gently fold in the grated apple. Mix until just combined.
Divide the batter evenly among the muffin liners, filling each about three-quarters full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
