Preheat your oven to 350°F (180°C) and line a medium-sized baking pan with parchment paper.
In a large bowl, combine the flour, baking powder, and shredded coconut.
In a separate bowl, whisk together the eggs, granulated sugar, and vanilla sugar until light and fluffy. Then, add the melted butter and milk.
Gradually add the wet ingredients to the dry ingredients, gently folding with a spatula until just combined. Be careful not to overmix.
Peel, core, and thinly slice the apples. Toss them with the ground cinnamon.
Spread half of the batter into the prepared baking pan. Arrange half of the apple slices evenly over the batter.
Pour the remaining batter over the apples, then decorate the top with the remaining apple slices.
Bake in the preheated oven for approximately 35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool completely before slicing and serving. You can dust it with powdered sugar or sprinkle with extra shredded coconut.
