Wash the fresh mint leaves and shake off any excess water.
In a blender, combine the apple pieces, mint leaves, yogurt, honey, and lemon juice.
Pour in the water, and add a few ice cubes to make the smoothie cool and refreshing.
Blend everything on high speed for about 1-2 minutes, until you achieve a smooth and creamy consistency.
Taste and add more honey for sweetness or lemon juice for extra tang, if needed.
Pour the smoothie into glasses and garnish with mint leaves. Serve immediately to enjoy its freshness!
