Sift the flour into a large bowl, add a pinch of salt, and make a well in the center. Crack the eggs into the well and slowly incorporate the flour into the eggs, working the dough together. Add a little water as needed to create a pliable dough.
Knead the dough for at least 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
For the filling, peel and grate the apples. Mix them with the brown sugar, cinnamon, vanilla extract, and lemon zest.
Roll out the dough thinly. Evenly spoon small portions of the apple filling onto one half of the dough, spacing them appropriately.
Fold the other half of the dough over the filling. Use a ravioli cutter or a knife to cut out the individual ravioli. Press the edges firmly together to seal, preventing the filling from leaking out during cooking.
Bring a large pot of salted water to a boil. Drop the ravioli into the boiling water and cook for 3-4 minutes, or until they float to the surface.
Drain the ravioli. In a skillet, melt the butter over medium heat. Gently toss the ravioli in the melted butter to lightly caramelize them.
Serve drizzled with honey and sprinkled with ground walnuts. Enjoy warm!
