Boil the potatoes until tender, then mash them thoroughly and let them cool completely.
Add the flour, egg, and salt to the mashed potatoes. Knead until a smooth dough forms.

Pit the apricots. Place one apricot half in the center of each dough square. Enclose the apricot with the dough and form into dumplings.
Bring a large pot of salted water to a boil. Cook the dumplings for about 10 minutes, or until they float to the surface.
In a skillet, melt the butter over medium heat. Add the breadcrumbs and toast until golden brown, stirring constantly.
Remove the dumplings from the water with a slotted spoon and toss them in the toasted breadcrumbs. Serve sprinkled with sugar and cinnamon.
