This jam is often made according to old family recipes, where ripe, sweet apricots are slowly cooked until silky smooth. Spread on bread or used as a filling for cakes, it's simply heavenly.

1000 g Apricots
500 g Sugar
2 tbsp Lemon Juice

    Wash the apricots, remove the pits, and chop them into smaller pieces.

    In a large saucepan, heat the apricots over medium heat, then add the sugar and lemon juice.

    Cook over low heat, stirring constantly, until the apricot pieces are completely softened and the jam has thickened (about 30-40 minutes).

    Once it has reached the desired consistency, use an immersion blender to purée until smooth.

    Pour the finished jam into clean, sterilized jars and invert them to cool.
