Allow the cooked risotto rice to cool completely. Mix it with the grated Parmesan cheese and one egg.
Dice the mozzarella cheese into small cubes. Prepare the ham or ground meat.
Shape the rice mixture into small balls. Press a cube of mozzarella and a small amount of ham or meat into the center of each ball.
First, dredge the balls in flour, then dip them in beaten egg, and finally coat them in breadcrumbs.
In a deep skillet or deep fryer, heat the oil. Fry the balls until golden brown.
Drain the excess oil on paper towels. Serve warm with tomato sauce or a fresh salad.
