Dissolve the yeast in lukewarm milk with a pinch of sugar.
In a large bowl, combine the flour, sugar, salt, proofed yeast mixture, eggs, and lukewarm butter. Knead until a smooth dough forms.
Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.
On a lightly floured surface, roll the risen dough to about 1/2 inch (1 cm) thickness. Use a small round cookie cutter to cut out small rounds.
Combine the chopped walnuts with ground cinnamon and vanilla sugar.
Grease a baking pan. Layer the dough rounds in the pan, sprinkling each layer generously with the walnut-cinnamon-sugar mixture.
Bake in a preheated oven at 350°F (180°C) for about 30-35 minutes, or until golden brown.
Serve warm with vanilla custard sauce.
