Place the lamb cubes in the marinade and let them sit for at least 1 hour, or preferably overnight in the refrigerator.
Soak the wooden skewers in water for 20 minutes to prevent them from burning during grilling.
Thread the marinated lamb meat onto the skewers, ensuring that there is a small space between the pieces for even cooking.
Preheat a grill or grill pan to medium-high heat. Cook, turning the skewers occasionally, until they are golden brown on all sides, about 8-10 minutes.
Before serving, sprinkle the skewers with fresh rosemary and serve with fresh lemon wedges. You can also drizzle with a little olive oil, if desired.
