Preheat your oven to 350°F (180°C). Peel and slice the apples.
Place the apple slices on a baking sheet lined with parchment paper, sprinkle with cinnamon, and drizzle with honey. Bake for 15 minutes, or until caramelized.
Meanwhile, melt the butter over low heat, then let it cool slightly.
In a large bowl, whisk together the flour, baking powder, sugar, vanilla sugar, and a pinch of salt.
In another bowl, whisk the eggs, then add the milk and melted butter. Mix well.
Pour the wet ingredients into the dry ingredients, and stir until just combined. Do not overmix.
Preheat your waffle iron and lightly grease it with butter or oil to prevent sticking.
Pour a ladleful of batter onto the hot waffle iron and cook for 3-5 minutes, or until golden brown and crispy.
Repeat the cooking process with the remaining batter, and keep the waffles warm until serving.
To serve, pile the baked apple slices on top of the waffles and sprinkle with chopped walnuts for an extra burst of flavor.
