Pat the fish fillets dry with paper towels. Season with salt and pepper on both sides.
Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
Place the fish fillets on the baking sheet. Crush the garlic and sprinkle it over the fish. Slice the lemons into thin rounds and arrange them on top of the fillets.
Scatter fresh parsley and rosemary sprigs (if using) around the fish in the baking sheet.
Bake the fish for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
Serve the baked fish fresh, with lemon wedges and light side dishes such as steamed vegetables or salad.
