In a large bowl, combine the flour, active dry yeast, sugar, and salt. Add the lukewarm water and melted butter, then mix until a smooth dough forms.
Knead the dough for 8-10 minutes until it is elastic and smooth. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Divide the risen dough into 8 equal pieces. Roll each piece into a long rope, then shape them into pretzel shapes.
Bring 1 liter of water to a boil, remove from heat, and stir in the baking soda (be careful, it will foam!).
Dip each pretzel into the baking soda water for 30 seconds, then remove and place on a baking sheet lined with parchment paper.
Finely chop the fried onion and sprinkle it over the pretzels. The sweet, caramelized flavor of the fried onion pairs perfectly with the savory pretzel.
Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, or until golden brown and crispy. Best served fresh.
