In another bowl, whisk the eggs, then add the milk, melted butter, vanilla extract, and grated orange zest.
Pour the wet ingredients into the dry ingredients, and whisk until the batter is smooth and free of lumps.
Heat a skillet over medium heat, and grease it lightly with oil.
Pour a small amount of batter onto the skillet, and cook for 2-3 minutes, until the bottom is golden brown.
Flip the pancake and cook for another 1-2 minutes, until fully cooked through.
In a separate bowl, combine the ground walnuts, ground pistachios, and honey.
Layer the pancakes, spreading the honey-nut mixture between each layer.
Drizzle extra honey on top, and sprinkle with ground pistachios.
Serve fresh, perhaps with a dollop of whipped cream or Greek yogurt.
