Boil the potatoes in their skins in salted water for about 20 minutes, or until they are completely tender.
Peel the potatoes while they are still warm, then mash them with a potato ricer or fork in a bowl.
Let the mashed potatoes cool slightly, then add the egg, salt, and flour. Knead until you have a soft, non-sticky dough.
Divide the dough into several portions and roll them into logs. With a sharp knife, cut into approximately 2 cm pieces.
Bring a large pot of water to a boil, then add salt. Cook the gnocchi in small batches until they float to the surface (about 2 minutes), then drain them.
Melt the butter in a skillet over medium heat, then sauté the cooked gnocchi until lightly golden brown.
In a small saucepan, combine the banana, honey, vanilla, and cream, then start to heat over medium heat.
Cook the banana sauce until it thickens slightly, then add the finely chopped dark chocolate and stir until melted to create a silky sauce.
Pour the banana-chocolate sauce over the sautéed gnocchi, then gently toss to coat each piece.
Sprinkle with powdered sugar and a little extra grated chocolate for the perfect finishing touch.
Serve immediately while warm, garnished with a few extra banana slices and chocolate sauce!
