In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
In another bowl, cream together the softened butter, granulated sugar, and vanilla sugar until light and fluffy. Beat in the eggs one at a time.
Mash the bananas with a fork and stir them into the butter mixture. TIP: Using riper bananas will give the bread a sweeter flavor.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. TIP: Avoid overmixing, which can make the bread tough.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. TIP: Avoid opening the oven during the first 30 minutes to prevent the bread from collapsing.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice and serve. TIP: Serve with whipped cream or a dusting of powdered sugar.
