Peel the bananas and slice them into approximately 0.5 cm thick rounds. Set aside and use just before serving to prevent browning. Tip: If you slice them in advance, lightly coat them with lemon juice to maintain their color.
Chop the dark chocolate and melt it in a heatproof bowl over a double boiler or at low heat. Do not boil; just melt until smooth and creamy.
Steam the bao buns: place them in a bamboo or metal steamer over boiling water and steam for 5-6 minutes, or until completely softened. Tip: Use parchment paper to prevent them from sticking!
Carefully slice open the hot bao buns, but do not cut them completely in half. Place a few banana slices into each, then drizzle with the melted chocolate. If desired, you can smooth the chocolate over the banana with the back of a spoon.
Serve immediately while the bao buns are warm and the chocolate is creamy. Tip: For an extra touch, stir a pinch of cinnamon or vanilla into the chocolate while melting.
