300 ml Warm Water
1 tsp Sugar
30 ml Olive Oil
500 g Flour
10 g Salt
200 g Chicken Breast Fillet
100 ml Barbecue Sauce
150 g Mozzarella Cheese
20 ml Olive Oil (for brushing)

    First, prepare the yeast: in a bowl, combine the warm water and sugar, then crumble in the yeast. Let it stand for 10 minutes, until foamy.

    Meanwhile, in a large bowl, whisk together the flour and salt. When the yeast is foamy, add the olive oil and pour it into the flour mixture. Mix until combined, then knead into a smooth dough.

    Cover the dough and let it rest for 1 hour to rise. The ideal temperature is around 77°F (25°C).

    Once the dough has risen, turn it out onto a floured surface and gently roll it into a rectangular shape.

    Slice the chicken breast into small pieces and cook in a skillet until browned. Then, add the barbecue sauce and mix well to coat.

    Place the barbecue chicken on the dough, followed by the grated mozzarella cheese. Fold up the edges of the dough, gently pressing the chicken and cheese into it.
