Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Finely chop the fresh basil and crush the garlic.
In a bowl, combine the ricotta cheese, chopped basil, grated Parmesan cheese, and crushed garlic.
Add a drizzle of olive oil, salt, and pepper. Mix well until you have a smooth filling.
Roll out the puff pastry on a lightly floured surface and cut it into equal-sized triangles.
Place a spoonful of the basil filling onto the wider end of each triangle.
Carefully roll up the triangles into croissant shapes, starting from the wider end.
Brush the tops of the croissants with beaten egg and sprinkle with sesame seeds.
Place the croissants on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
Let the croissants cool for a few minutes before serving warm or at room temperature.
