Divide the dough into 8-10 equal portions. Shape each portion into an oval disc, fold in half, and steam over parchment paper for 10-12 minutes, or until springy to the touch.
In a skillet, heat the shredded beef with the BBQ sauce, minced garlic, and a drizzle of sesame oil. Simmer for 6-8 minutes, until the beef is heated through and the sauce has slightly thickened.
Open the steamed bao buns and fill with the BBQ beef. Top with cucumber slices and sprinkle with fresh scallions. The crisp freshness of the vegetables provides a fantastic contrast to the sticky meat.
