Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Thoroughly wash the potatoes and cut them into smaller, evenly sized pieces. Leave the skin on for a more rustic flavor, if desired.
Place the potato pieces in a large mixing bowl, then melt the butter and pour it over. Add the minced garlic, salt, and pepper, and toss well to coat all the potato pieces with the seasoned butter.
Spread the seasoned potatoes on the prepared baking sheet and bake for 30-35 minutes, or until golden brown and crispy. Stir the potatoes occasionally to ensure even cooking.
While the potatoes are baking, dice the bacon into small pieces and cook in a skillet until crispy. Once cooked, place on a paper towel-lined plate to absorb any excess grease.
Grate the cheddar cheese and slice the green onions into thin rings.
When the potatoes are cooked, remove them from the oven and sprinkle with the grated cheddar cheese. Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
Remove the cheesy potatoes from the oven, then drizzle with BBQ sauce and sour cream. Sprinkle with the crispy bacon and green onions.
Serve warm! Best enjoyed fresh, but leftovers can be stored in the refrigerator and reheated in the oven or skillet.
