BBQ Grilled Barbecue Avocado Salad

Grilled avocado is becoming increasingly popular, as the smoky flavor adds a special character to this creamy fruit. The sweet crunch of corn and the smoky flavor of BBQ sauce harmonize perfectly with the grilled avocado. This light and refreshing salad is an ideal accompaniment to grilled meats, but can also be served on its own as an excellent summer dish.

    Preparation Steps

    1

Halve the avocados, remove the pits, and carefully peel them, keeping the avocado halves intact.

    2

In a bowl, combine the olive oil, smoked paprika, chili flakes, salt, and pepper. Brush the cut surfaces of the avocados with this mixture.

    3

Preheat the grill to medium heat. Place the avocados cut-side down on the grill grates. Grill for 3-4 minutes, or until light smoky grill marks appear.

    4

While the avocados are grilling, halve the cherry tomatoes and finely chop the red onion.

    5

In a bowl, mix together the tomatoes, corn, red onion, BBQ sauce, and lime juice.

    6

Remove the avocados from the grill and slice them or scoop out the flesh into bite-sized pieces.

    7

Add the avocado to the salad and gently mix, being careful not to mash it.

    8

Sprinkle with fresh cilantro and serve immediately with grilled meats, fish, or tortilla chips.
