Thoroughly wash the beets, then peel them. Be sure to wear gloves, as beets can easily stain your hands.
Cut the beets into slices approximately 1 cm thick to ensure even grilling.
In a bowl, combine the olive oil, balsamic vinegar, honey, salt, and pepper. Toss the beet slices in the mixture to coat them evenly.
Preheat the grill to medium-high heat. If necessary, lightly oil the grill grates to prevent the beets from sticking.
Place the beet slices on the grill and cook for about 4-5 minutes per side, until slightly tender and grill marks appear.
While grilling, sprinkle with finely chopped fresh rosemary for added aroma.
Before serving, drizzle with a little extra balsamic vinegar. Serve fresh alongside grilled dishes or as a standalone side dish.
