Roll out the pie dough on a lightly floured surface, then place it on a baking paper-lined grill rack or in a cast-iron skillet.
Grill the crust for 5-7 minutes, until lightly browned and crispy.
In a small saucepan, melt the butter, then add the brown sugar, honey, and cinnamon. Stir constantly until the sugar dissolves and slightly caramelizes.
Pour in the heavy cream and vanilla extract, then stir for another 1-2 minutes until a silky caramel sauce forms.
Pour the caramel sauce onto the pre-grilled pie crust, then sprinkle with chopped walnuts and a pinch of sea salt for extra flavor.
Close the grill lid and grill for another 5-7 minutes, until the caramel is slightly set and the pie is perfectly baked.
Let cool for a few minutes before serving, then slice and serve with vanilla ice cream or fresh fruit.
