Thoroughly wash and peel the carrots. Halve or quarter them lengthwise to ensure even cooking.
In a small bowl, combine the olive oil, minced garlic, honey, salt, and pepper. This will be your marinade.
Place the carrots in a large bowl and brush them with the marinade. Let them sit for 10 minutes to absorb the flavors.
Preheat your grill to medium-high heat. If using a grill grate, lightly oil it to prevent the carrots from sticking.
Place the carrots on the grill and cook for 5-6 minutes per side, until they are nicely charred and slightly tender.
During the last minute of grilling, brush the carrots with BBQ sauce, then cook for another minute to allow the sauce to caramelize slightly.
Remove the carrots from the grill and sprinkle with fresh thyme before serving. Serve warm, either as a side dish or as a standalone dish.
