Toss the cauliflower florets in the BBQ spice mixture to coat them evenly.
Preheat your grill to medium heat, or use a grill pan.
Place the cauliflower florets on the grill and cook for 3-4 minutes per side, or until lightly charred.
Meanwhile, in a bowl, whisk together the sour cream, eggs, and grated cheddar cheese.
Place the grilled cauliflower in a greased baking dish, then pour the cheese and sour cream mixture over it.
Preheat the oven to 350°F (180°C) and bake for 15-20 minutes, until the top is golden brown.
Before serving, sprinkle with fresh parsley and serve hot.
