Preheat your grill to medium heat. If using a charcoal grill, allow the embers to provide even heat.
Place a marshmallow on a skewer or a long fork and hold it over the grill, rotating constantly to toast all sides evenly, being careful not to burn it.
In a bowl, melt the dark chocolate over a double boiler or in the microwave. Add a touch of honey, vanilla extract, and a pinch of cinnamon to enhance the flavors.
Remove the marshmallow from the grill and place it on a shortbread or graham cracker. Drizzle with some of the melted chocolate, then top with another cracker, as if making a sandwich.
Gently press the crackers together so the chocolate and marshmallow melt together, then sprinkle with a pinch of sea salt for an extra burst of flavor.
Serve immediately, or if you prefer, let it sit for a minute or two to allow the chocolate to set slightly.
