Halve the bananas lengthwise, keeping the peel on to help them hold their shape during grilling.
In a bowl, combine the honey, melted butter, cinnamon, and vanilla extract. Brush this mixture over the cut sides of the bananas.
Preheat your grill to medium heat. If desired, grease the grates with oil or butter to prevent the bananas from sticking.
Place the bananas cut-side down on the grill grates and grill for 2-3 minutes, or until lightly caramelized.
Flip the bananas and sprinkle the chopped dark chocolate over the cut sides. Close the grill lid and let it heat for another 1-2 minutes, or until the chocolate is melted and gooey.
Before serving, sprinkle with a pinch of sea salt and, if desired, garnish with ground nuts for an extra crunchy texture.
