Place the corn on the grill and cook, turning occasionally, for 2-3 minutes per side, or until lightly charred and caramelized.
Meanwhile, finely dice the bell pepper, red onion, and fresh cilantro.
Once the corn is cooked, remove it from the grill and let it cool slightly. Then, using a sharp knife, cut the kernels off the cob.
In a large bowl, combine the grilled corn kernels, diced bell pepper, red onion, and cilantro.
Season with smoked paprika, salt, and black pepper. Drizzle with lime juice and a touch more olive oil.
If desired, crumble feta cheese over the salad for added flavor.
Serve fresh alongside grilled dishes or enjoy as a light and refreshing summer meal.
