In a bowl, combine the grated ginger, honey, cinnamon, nutmeg, and vanilla extract to create a flavorful glaze for the gingerbread.
Roll out the gingerbread dough to about 5 mm thickness and cut out your desired shapes.
Preheat the grill to medium heat and grease the grates with a little melted butter to prevent the dough from sticking.
Place the gingerbread pieces on the grill and cook for 2-3 minutes per side, until lightly marked with grill lines and crispy.
Towards the end of grilling, brush with the honey-ginger glaze to allow the flavors to meld and slightly caramelize.
Before serving, sprinkle with powdered sugar, or serve with a drizzle of maple syrup or melted chocolate for a richer flavor experience.
