Wash the peaches, halve them, and remove the pits. If desired, leave the skin on to help them hold their shape while grilling.
In a small bowl, combine the honey, melted butter, grated ginger, lemon juice, cinnamon, and vanilla extract.
Brush the cut sides of the peaches with the honey-ginger mixture, then let them sit for 5-10 minutes to allow the flavors to absorb.
Preheat the grill to medium-high heat. Grease the grates with a little melted butter to prevent the peaches from sticking.
Place the peaches cut-side down on the grill grates and cook for 3-4 minutes, until caramelized grill marks appear.
Flip the peaches and cook for an additional 2 minutes, until the fruit is warmed through and even juicier.
Before serving, drizzle with the remaining honey-ginger mixture and, if desired, sprinkle with chopped almonds for extra crunch.
