Wash the apples, halve them, and remove the core. If desired, you can also cut them into slices for faster cooking.
In a bowl, combine the maple syrup, melted butter, lemon juice, cinnamon, and vanilla extract. This will give the apples a caramelized, spicy flavor.
Brush the surface of the apples with the prepared maple syrup mixture, then let them stand for 5-10 minutes to allow the flavors to absorb well.
Preheat the grill to medium-high heat. Grease the grates with a little melted butter to prevent the apples from sticking.
Place the apples cut-side down on the grill grates and cook for 3-4 minutes, until caramelized grill marks appear.
Flip the apples and cook for another 2 minutes, so the entire fruit is heated through and even juicier.
Before serving, drizzle with the remaining maple syrup mixture, and if desired, sprinkle with chopped nuts for extra crunch.
