Melt the butter over low heat, then mix in the brown sugar and vanilla sugar until smooth.
In a bowl, combine the cookie crumbs, baking powder, and a pinch of salt to ensure the dry ingredients are evenly distributed.
Whisk the egg, then add it to the melted butter-sugar mixture and combine well.
Gradually mix in the dry ingredients until a manageable dough forms.
Preheat the grill to medium heat (about 350°F/180°C) and place a baking sheet lined with parchment paper on it.
Shape the dough into small cookies (about 2 inches/5 cm in diameter) and place them on the prepared baking sheet.
Bake on the covered grill for 8-10 minutes, or until golden brown.
Take a marshmallow and press it into the center of each cookie, then grill for another 2 minutes, until the marshmallow is lightly melted and caramelized.
When done, sprinkle with finely chopped dark chocolate, which will melt delicately on the warm cookies.
Let cool for 5 minutes, then serve warm, possibly with extra marshmallows or chocolate sauce.
