Peel the red onions and slice them into half-centimeter thick rings. Be careful to keep the slices intact.
In a small bowl, combine the olive oil, minced garlic, balsamic vinegar, salt, and pepper. This will be your marinade.
Gently toss the onion rings in the marinade, ensuring they are well coated. Let them sit for 10 minutes.
Preheat your grill to medium heat. If using a grill grate, lightly oil it to prevent the onions from sticking.
Place the onion rings on the grill and cook for 3-4 minutes per side, until lightly charred and caramelized.
During the last minute of grilling, brush the onions with BBQ sauce using a basting brush, then cook for another minute to allow the sauce to caramelize slightly.
Remove the onions from the grill and sprinkle with fresh rosemary before serving. Serve warm, either as a side dish or as a standalone dish.
