Wash the peaches, cut them in half, and remove the pits. You can leave the skin on, as it helps the fruit retain its shape while grilling.
In a bowl, combine the honey, melted butter, lime juice, cinnamon, vanilla extract, and smoked paprika. This will give the peaches a rich, sweet, and slightly smoky flavor.
Brush the cut sides of the peaches with the prepared mixture, then let them sit for 5-10 minutes to allow the flavors to absorb.
Preheat the grill to medium-high heat. Grease the grates with a little melted butter to prevent the peaches from sticking.
Place the peaches cut-side down on the grill grates and grill for 3-4 minutes, or until caramelized grill marks appear.
Flip the peaches and grill for another 2 minutes, so the whole fruit heats through and becomes even juicier.
Before serving, drizzle with the remaining honey mixture and, if desired, sprinkle with coarsely chopped walnuts for a crunchy texture.
