Peel the pineapple, remove the tough core, and cut into slices or long strips about 1-2 cm thick.
In a bowl, combine the honey, brown sugar, lime juice, cinnamon, and smoked paprika. For an extra kick, add a splash of rum.
Brush or spoon the mixture over the pineapple slices, then let them marinate for 10-15 minutes to allow the flavors to absorb.
Preheat the grill to medium-high heat. Lightly grease the grates with melted butter to prevent the pineapple from sticking.
Place the pineapple slices on the grill grates and cook for 2-3 minutes per side, or until caramelized grill marks appear.
Before serving, you can drizzle the fresh, warm pineapple with a little extra honey or lime juice. Serve immediately, either on its own or as a side dish with grilled meats.
