Peel the pineapple and cut it into thick slices for easy grilling.
Preheat the grill to medium heat and brush the pineapple slices with a little olive oil.
Place the pineapple on the grill rack and cook for 3-4 minutes per side, until lightly caramelized and grill marks appear.
Remove the pineapple from the grill and chop it into small dice.
Heat olive oil in a saucepan and sauté the finely chopped red onion and garlic, then add the grated ginger.
Add the brown sugar, apple cider vinegar, BBQ sauce, chili flakes, smoked paprika, salt, and pepper. Mix well.
Finally, stir in the grilled pineapple and simmer over low heat for another 10 minutes to allow the flavors to meld.
Remove from heat and let it cool slightly. Serve warm or cold with grilled meats, cheeses, or toast.
