Cut the pork belly into slices about ½ inch thick. Let it sit at room temperature for at least 20 minutes.
In a small bowl, combine the salt, pepper, garlic powder, smoked paprika, and brown sugar.
Rub the pork belly slices with olive oil, then evenly sprinkle with the spice mixture.
Preheat your grill to medium-high heat (approximately 350-400°F or 180-200°C). If using a charcoal grill, allow the charcoal to burn until completely glowing.
Place the pork belly slices on the grill rack and cook for 3-4 minutes on one side, then flip and cook for another 3-4 minutes.
In a small saucepan, combine the apple cider vinegar, Worcestershire sauce, and honey. During the last 2 minutes of grilling, start brushing the pork belly with this mixture.
During the last minute, brush the pork belly with BBQ sauce and continue grilling until it caramelizes slightly.
Remove the pork belly from the grill and let it rest for a few minutes. Serve with fresh vegetables or toasted bread.
