Wash the pumpkin, then peel it and cut it into approximately 1 cm thick slices or wedges for even grilling.
In a small bowl, combine the olive oil, honey, cinnamon, salt, and pepper. Toss the pumpkin slices in the mixture to coat them evenly.
Preheat the grill to medium-high heat. If grilling on a grill grate, lightly oil it to prevent the pumpkin from sticking.
Place the pumpkin slices on the grill and cook for about 4-5 minutes per side, until lightly charred and tender.
While grilling, sprinkle with fresh thyme leaves for an extra layer of aroma.
Once the pumpkin is cooked, drizzle with a little extra honey before serving for an even sweeter taste.
Serve as a side dish or as a standalone dish, perhaps alongside a fresh salad.
