Peel the red onions and cut them in half or into thicker slices, depending on how you want to grill them.
In a bowl, combine the olive oil, brown sugar, balsamic vinegar, smoked salt, and black pepper. Brush the onion slices with this mixture.
Preheat the grill to medium heat, then place the onions on the grill grates. Grill for about 5 minutes, until slightly softened and slightly charred.
Flip the onions and pour the red wine over them. Let it simmer for another 3-4 minutes, allowing the alcohol to evaporate and the onions to absorb the wine's aroma.
Brush the onions with BBQ sauce, then grill for another 2-3 minutes, until the sauce is slightly caramelized.
Remove from the grill and sprinkle with freshly chopped thyme.
Serve hot with steak, grilled meats, or fries, or as a delicious burger topping.
