BBQ grilled spicy mushroom ragout served

BBQ Grilled Spicy Mushroom Ragout

Grilled mushrooms are one of the best meatless grilling options, perfectly absorbing the aromas of BBQ sauce and smoked paprika. The balance of spicy chili flakes and balsamic vinegar lends a special flavor to this ragout, which can be enjoyed as a side dish or a main course. It goes particularly well piled on toast or served with grilled meats.

    Preparation Steps

    1

Clean the mushrooms and cut them into thick slices.

    2

In a bowl, combine the olive oil, chili flakes, smoked paprika, salt, and pepper. Toss the mushroom slices in the mixture to coat evenly.

    3

Preheat the grill to medium-high heat. Place the seasoned mushroom slices on the grill and grill for 6-8 minutes, turning occasionally.

    4

While the mushrooms are grilling, finely chop the onion and garlic. In a skillet, heat a little olive oil and sauté the onion and garlic until softened.

    5

Add the grilled mushrooms to the skillet, pour in the BBQ sauce and balsamic vinegar, and stir well to combine.

    6

Simmer over low heat for another 5 minutes to allow the flavors to meld. Sprinkle with fresh chopped parsley.

    7

Serve hot as a side dish with grilled meats, as a topping, or on toast as a standalone dish.
