Thoroughly wash the sweet potatoes, then peel them and cut them into slices or sticks about 1/4 inch thick.
In a small bowl, combine the olive oil, minced garlic, honey, salt, and pepper. This will be your marinade.
Place the sweet potato slices or sticks in a large bowl and brush them with the marinade. Let it sit for 10 minutes.
Preheat your grill to medium-high heat. If using a grill with grates, lightly oil them to prevent the sweet potatoes from sticking.
Place the sweet potatoes on the grill and cook for 5-6 minutes per side, until they develop nice grill marks and are slightly softened.
During the last minute of grilling, brush the sweet potatoes with BBQ sauce, then cook for another minute to allow the sauce to slightly caramelize.
Remove the sweet potatoes from the grill and sprinkle with fresh rosemary before serving. Serve warm, either as a side dish or as a standalone dish.
